Introduction: A Question We’ve All Asked Ourselves
I’m sure you’ve been there.
You’ve made a large pot of homemade vegetable soup, cooked a family-sized stew or bought some fresh fish while it was on offer, and decided to freeze it.
But just as you close the freezer door, the question pops into your mind.
Will it still be as nutritious when I defrost it?
For a long time, we’ve tended to associate the word fresh with better. Almost without realising it, many of us have come to think that freezing food somehow “damages” it.
I used to think exactly the same.
It seemed obvious to me that freshly bought food had to be far more nutritious than something that had spent weeks or months in the freezer.
But the more I researched food preservation, the more surprised I was to discover that reality is rather different.
In fact, in some cases, the opposite is true.
We now know that freezing is one of the best methods of preserving the nutritional value of food. In some situations, frozen produce can even retain more vitamins than food that has spent several days sitting in the fridge.
And once you understand why, you begin to look at your freezer in a completely different way.
What Actually Happens When We Freeze Food?
Freezing simply means lowering the temperature of food until much of the water it contains turns into ice.
This has a very important effect.
Low temperatures dramatically slow down almost all the chemical reactions responsible for food deteriorating over time.
They also stop the growth of most of the microorganisms that cause food to spoil.
In other words, your freezer acts like a pause button.
It doesn’t improve the food.
But when food is frozen properly, it doesn’t significantly damage it either.
So… Do Foods Lose Nutrients?
The short answer is:
Much less than most of us imagine.
The vast majority of nutrients remain remarkably stable during freezing.
Protein
Protein is barely affected.
Meat, fish, seafood and legumes retain virtually all of their protein content, even after several months in the freezer.
Fat
Fats also keep very well.
Only foods that are particularly rich in polyunsaturated fats, such as oily fish, may undergo a small amount of oxidation if they remain frozen for a very long time or aren’t properly protected from air.
That’s why it’s worth wrapping them carefully before freezing.
Minerals
Iron.
Calcium.
Magnesium.
Zinc.
Potassium.
These minerals remain virtually unchanged.
After all, minerals don’t disappear simply because food has been frozen.
Carbohydrates and Fibre
These are also largely unaffected.
Fruit, vegetables and legumes retain almost all of their fibre and carbohydrate content after freezing.
Vitamins: The Only Nutrients That Are Slightly More Sensitive
Vitamins are probably the nutrients that raise the most questions.
And here’s an interesting detail.
Vitamins aren’t mainly lost because food is frozen.
In reality, the small losses usually occur before the food even reaches the freezer.
For example, many commercially frozen vegetables are blanched for a short time before freezing.
Blanching involves briefly immersing vegetables in boiling water or exposing them to steam to deactivate natural enzymes that would otherwise affect their colour, flavour and texture over time.
During this process, a small amount of water-soluble vitamins—particularly vitamin C and some B vitamins—may be lost.
However, once the food has been frozen, those losses slow dramatically.
In other words, freezing acts like a nutritional snapshot.
It preserves food remarkably well in the condition it was in at the moment it was frozen.
A Surprising Fact That Changes the Way We Think About Frozen Food
This may come as a surprise, but peas frozen just a few hours after being harvested can actually contain more vitamin C than “fresh” peas that have spent a week being transported, stored and displayed in a supermarket.
The same is true for many fruits and vegetables.
Time also reduces nutrient levels.
And in some cases, that passage of time has a greater impact than the freezer itself.
That’s why we shouldn’t automatically assume that fresh always means more nutritious.
When it comes to nutrition, context matters far more than we often realise.
Which Foods Retain Their Nutrients Best When Frozen?
The good news is that most foods retain their nutritional value remarkably well when frozen correctly.
That said, not all foods respond to freezing in exactly the same way.
In some cases, you’ll barely notice any difference. In others, what changes isn’t the nutritional content, but rather the texture or appearance of the food.
Fruit
Fruit generally freezes extremely well.
Berries, mango, bananas, pineapple and peaches retain most of their vitamins, minerals and fibre.
It’s true that, once thawed, some fruits become softer because the ice crystals formed during freezing break down part of the cellular structure. From a nutritional point of view, however, they remain an excellent choice.
They’re perfect for smoothies, homemade fruit compotes, yoghurt or simply stirred into porridge.
Vegetables
Vegetables also retain their nutrients very well.
Broccoli, cauliflower, green beans, spinach, peas and carrots all maintain a nutritional profile very similar to their fresh counterparts.
In fact, as we mentioned earlier, many commercially frozen vegetables are frozen within hours of being harvested, when they still contain a large proportion of their vitamins.
Meat and Poultry
Meat loses very little nutritional value during freezing.
The main thing to avoid is freezer burn — those dry, pale patches that can develop when food is exposed to air inside the freezer.
Although freezer burn isn’t usually a food safety issue, it can affect flavour, texture and juiciness.
Fish

Fish also freezes exceptionally well, particularly if it is frozen soon after being caught.
In countries such as Spain, freezing fish before eating it raw or lightly cooked is also recommended to reduce the risk of Anisakis parasites.
Cooked Pulses
One of my favourite freezer staples.
Cooking a large batch of chickpeas, lentils or beans and freezing them in portions makes preparing healthy meals during the week so much easier.
And they retain virtually all of their nutritional value.
Why Do Some Foods Change So Much After Defrosting?
You’ve probably noticed it yourself.
You thaw some strawberries and they’re no longer firm.
Or a lettuce leaf becomes limp and wilted.
The explanation lies in water.
When food freezes, the water it contains forms tiny ice crystals.
These crystals can rupture the cell walls of foods, particularly those with a high water content.
Once thawed, those damaged cells are no longer able to hold onto water in the same way.
That’s why the texture changes.
But it’s worth remembering that texture and nutritional value are not the same thing.
A thawed strawberry may not be as enjoyable to eat on its own, but it’s still perfect for a smoothie, homemade compote or yoghurt.
The Most Common Freezing Mistakes
Freezing food properly isn’t complicated, but there are a few common mistakes that can affect its quality.
Freezing Food While It’s Still Hot
It’s best to allow cooked food to cool before placing it in the freezer.
This prevents the temperature inside the freezer from rising and helps reduce ice build-up.
That said, food shouldn’t be left at room temperature for several hours. Ideally, let it cool reasonably quickly before freezing.
Not Wrapping Food Properly
Air is one of the biggest enemies of frozen food.
Using airtight containers or freezer-safe bags helps preserve texture and flavour.
Forgetting to Label Everything
It sounds obvious…
Until a mysterious container appears at the back of the freezer months later and nobody remembers what’s inside.
Labelling food with its contents and the freezing date makes life much easier and helps reduce food waste.
Freezing Portions That Are Too Large
Freezing meals in family-sized or individual portions is usually much more practical.
That way, you only defrost what you actually need.
Can You Refreeze Food?
It’s one of the questions people ask most often.
The answer is: it depends.
If food has been thawed safely in the fridge and is then cooked thoroughly, it can generally be frozen again.
However, it isn’t advisable to refreeze raw food that has been left at room temperature for several hours.
During that time, microorganisms may have multiplied to levels that freezing won’t eliminate.
Freezing stops their growth.
It doesn’t kill them.
What About Frozen Foods from the Supermarket?
Many people assume that frozen food is automatically less healthy than fresh food.
But it’s important to distinguish between two concepts that are often confused.
Frozen food is not the same as ultra-processed food.
Frozen vegetables, peas or fish can have an excellent nutritional profile.
On the other hand, frozen pizzas, breaded chicken products or ready-made meals are also frozen, but their nutritional quality depends entirely on the ingredients they’re made from.
It’s not freezing that determines whether a food is healthy.
It’s the food itself.
As always, reading the ingredient list remains one of the simplest and most effective ways to make informed choices.

If there’s one thing my freezer has taught me, it’s that eating well doesn’t always mean cooking from scratch every single day.
