Introduction
When I was little, I remember picking an apple straight from the tree and eating it there and then. We’d give it a quick rub on our T-shirt and carry on playing.
These days, most of us automatically wash our fruit and vegetables before bringing them to the table. We turn on the tap, rinse them for a few seconds and carry on preparing the meal.
But every now and then, new advice appears that makes us wonder whether that’s really enough.
Should we use vinegar? What about bicarbonate of soda? Is it different if we buy organic produce? And do we really need to wash a banana or an orange if we’re going to peel it anyway?
As with so many nutrition topics, the internet is full of advice that often seems to contradict itself.
In this article, we’ll look at what food safety authorities actually recommend and which habits are genuinely worth adopting at home—without making life more complicated than it needs to be.
Why Should We Wash Fruit and Vegetables?
The purpose of washing fruit and vegetables isn’t to sterilise them or somehow make them “healthier”.
Its role is much simpler.
A thorough rinse helps remove:
- Soil and dust.
- Small insects and surface dirt.
- Some of the microorganisms found on the surface.
- A proportion of any pesticide residues that remain on the outside of the produce.
That last point is worth explaining.
Approved pesticides are subject to strict regulations, and food sold to consumers must comply with maximum residue limits established by food safety authorities. Even so, washing fruit and vegetables is still recommended because it helps remove surface dirt, microorganisms and part of any residues that may remain on the outside.
However, no washing method can remove pesticides that have already been absorbed into the fruit or vegetable while it was growing.
That’s why it’s worth being cautious of any product or homemade remedy that claims to “remove all pesticides”. Quite simply, that’s not possible.
Is Water Enough?
The short answer is yes.
For the vast majority of fruit and vegetables we eat at home, rinsing them thoroughly under clean running water is all that’s needed.
Major food safety organisations, including the World Health Organization (WHO), the European Food Safety Authority (EFSA), the UK’s Food Standards Agency (FSA) and the U.S. Food and Drug Administration (FDA), all recommend washing fresh produce with clean drinking water before eating it.
For produce with firmer skins, such as potatoes, carrots, cucumbers or melons, gently rubbing the surface with your hands—or using a clean vegetable brush—can help remove additional dirt.
There’s no need to use soap, washing-up liquid or household cleaning products.
In fact, these products may leave residues that aren’t intended for consumption and haven’t been shown to offer any benefit over plain water.
What About Vinegar or Bicarbonate of Soda?
This is one of the questions people ask most often.
Perhaps because, over recent years, countless videos and social media posts have claimed they’re the best way to clean fruit and vegetables.
As is often the case, the reality is a little more nuanced.
Does Vinegar Help?
Vinegar does have some ability to reduce certain microorganisms when used at specific concentrations and for long enough.
However, for everyday use at home, the available evidence doesn’t show a clear advantage over simply washing produce under running water.
It also has a few limitations:
- It doesn’t remove pesticides that have already penetrated the fruit or vegetable.
- It can alter the flavour of delicate produce.
- It needs sufficient contact time before having any meaningful effect.
For these reasons, major food safety authorities do not recommend vinegar as a necessary step when washing fruit and vegetables at home.
What About Bicarbonate of Soda?
Bicarbonate of soda has become one of the most popular home remedies for washing produce.
Much of that attention comes from a study published in 2017 in the Journal of Agricultural and Food Chemistry, which found that a 1% bicarbonate of soda solution removed certain surface pesticide residues from apples more effectively than water alone.
However, there’s an important detail that’s often overlooked.
To achieve that result, the apples had to soak for between 12 and 15 minutes.
Even then, the bicarbonate solution couldn’t remove pesticides that had already penetrated beneath the skin of the fruit.
The study also focused on specific pesticides under controlled laboratory conditions. It doesn’t mean that soaking every piece of fruit and every vegetable in bicarbonate of soda is necessary or provides a significant benefit in everyday life.
If someone prefers to do it occasionally, there’s no harm in doing so, provided the produce is rinsed thoroughly afterwards with clean water.
For most households, however, a good rinse under running water remains the simplest, most practical and evidence-based approach.
What About Organic Fruit and Vegetables? Should We Wash Those Too?
Yes.
Even if your fruit and vegetables are organically grown, it’s still worth washing them before eating.
It’s easy to assume that organic produce arrives in our kitchens perfectly clean, but the reality is quite different.
These foods have still grown outdoors, been exposed to soil, rain and insects, and have passed through many hands during harvesting, transport and shopping.
It’s also worth remembering that organic farming doesn’t mean no crop protection products are used. Instead, it relies on a different range of substances that are approved under organic farming regulations, excluding most of the synthetic pesticides used in conventional agriculture.
Choosing organic produce may reduce exposure to certain synthetic pesticide residues, but it doesn’t remove the need to wash it.
Ultimately, washing serves the same purpose: removing dirt, dust and some of the microorganisms that may be present on the surface of the food.
Should We Wash Fruit That We’re Going to Peel?
Surprisingly, the answer is yes.
Think about an orange, a melon, an avocado or even a banana.
When we cut into them, the knife passes through the skin before reaching the flesh. If the outside carries dirt or microorganisms, the blade can transfer some of them to the part we’re about to eat.
That’s why organisations such as the U.S. Food and Drug Administration (FDA) recommend washing even fruit and vegetables that won’t be eaten with the skin on.
It’s a simple habit that only takes a few seconds but can help reduce the risk of cross-contamination.
Is There Ever a Time When We Shouldn’t Wash Fruit and Vegetables?
Actually, yes.
The best time not to wash them is before storing them.
Many fruits, especially delicate ones, keep their texture and freshness for longer when they’re stored dry.
Washing strawberries, raspberries, blackberries or blueberries as soon as you get home from the supermarket can leave excess moisture on the surface, encouraging mould growth and causing them to spoil more quickly.
The same applies to many leafy vegetables.
Whenever possible, it’s best to store them as they are and wash them just before eating.
Not only does this help them stay fresh for longer, but it can also reduce unnecessary food waste.
